WHere is an easy version of a beverage found on a new cocktail list. Designed as a large-volume pre-mixed which is loaded with essence associated with Christmas time, rendering it perfect for your celebration. Any leftover citrus syrup to use in morning drinks, sweets, or to make more rounds of this cocktail.
The Bikini Cocktail
Makes enough for 10 people
For the Clementine Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
Ingredients for the Premix (makes 850ml, to serve 10)
400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, as a final touch
Directions
Making the Cordial: Combine every ingredients into a saucepan, heat until it reaches a simmer, stirring to dissolve. Then, remove from the heat allowing it to cool completely. Decant into an sterilised bottle, seal and store chilled, where it will keep for about a month.
To make Batch Mix: Combine all the liquids into a large bottle, allow it to infuse for 60 minutes, then pass it through , ideally through cheesecloth, making it perfectly clear.
For serving: Pour 85ml of the premix into a cocktail shaker filled with ice, and stir lightly for a minute to chill. Strain into a frosted cocktail glass or similar, top with some cranberries adding the final touch with a light spray of mandarin oil above the glass.
